A hybrid between a crumble/cheesecake and lemon tart with delicious lemon curd (recipe on my blog under lemon tart recipe) and a cookie crust. I used lemon cookies for a crumble like base. This was totally experimental yet turned out delicious.
I used about a dozen lemon sandwich cookies with 1/4 cup butter, some lemon zest and a pinch of salt and ginger powder (a delightful accompaniment to lemon) This turned out to be an excellent shoe-in for pastry crust. The lemon curd is a balanced sweet and tart filling to offset the sweet cookie base.

Such a surprisingly delicious and easy to prepare dessert this is, perfect to get cozy during the chilly months. This is a warm spiced Apple Walnut Upside Down cake and I can safely say that I prefer this over pineapple upside down cake any day. Oh and a dollop of whipped cream is a must.
