Filipino Delicacies
Yema Cake - is a Filipino chiffon cake with a custard filling known as yema. It is generally prepared identically to mamón (chiffon cakes and sponge cakes in Filipino cuisine), with the only difference being that it incorporates yema either as frosting, as filling, or as part of the cake batter. Yema is a custard-like combination of milk and egg yolks.
Pinagong - A type of Filipino bread from Sariaya, a town in Quezon province. The name supposedly comes from the word pagong, meaning “turtle” — the shape is slightly reminiscent of the reptile. And the bread is crunchy on the outside, soft in the inside. (A turtle’s shell is hard. Inside the shell, the turtle’s flesh is soft.)
Kalihim - The word kalihim means “ to keep a secret” or a “keeper of secrets”. This soft bread, found at local bakeries or panaderías, is known for its distinctive, vibrant red-colored filling. And one surprising thing is that it’s made from stale bread, or the unsold bread of the day, which is used to make the red filling of the Kalihim bread for the next day.
