Moist Mocha Cupcake
Yields 12 to 15 cupcakes Recipe
Set A
1 ½ cup Sifted All purpose flour
2 tspn Baking powder
¼ tspn salt
1 tbspn cocoa powder
Set B
1 cup white sugar
¼ cup canol oil plus 2 tbspn
2 medium eggs
1 cup evaporated milk 240ml add ½ Tbspn Vinegar
2 Tbspn coffee powder (nescafe) dissolve with 2 Tbspn water
Frosting
1 cup whipping cream
2-4 tbspn icing sugar
Add drops of mocha emulco to have flavor and make little brown color
Pipe with rosettes on top
Baking temp 150c
Baking time 18-22mins

Dough
500 grams all purpose flour (you can use 50/50 bread flour and all purpose flour)
2 tsp instant dry yeast
1/2 tbsp salt
1/3 cup sugar
1/4 cup vegetable oil
280 grams water
1/2 tbsp up to 1 tbsp ube yam emulco
Bread crumbs for coating

Filling recipe

120 grams butter melted pwedeng margarine
1/2 cup bread crumbs
1/2 cup white sugar
1/2 cup flour apf
1-2 teaspoon ube yam emulco
Shredded cheese

Pag samasamahin lang ang filing parang feelings kay krasss uhgsss

Sa dough normally sama sama na lahat ginagawa ko (straight dough methods)
First proofing 1 - 2 hours
Each dough 40 to 60 grams
Second proofing 45 to 1hr

Remember paalsahin lang ng tama para masarap
At malambot ang ating breads

each dough weighs 30-40grams depends on size you desire , put the ube filling then put the cheese seal and roll in the bread crumbs
Bake at 180c in 18-22minutes

1/2 cup white sugar
1/2 cup brown sugar
1 can condensed milk
1/4 tsp.iodized Salt
1 tsp. Vanilla
3 pcs. Eggs
3 Cups APF Pilmico Flour
1 tsp. Baking powder
Cheese for Toppings

Bake for 35 to 40 minutes
150 degrees Celsius
