California-Style Cornbread Recipe
Ingredients
Dry Ingredients:
1 cup cornmeal
1 cup all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
Wet Ingredients:
1 cup milk
1/4 cup vegetable oil or melted butter
2 large eggs
Optional Add-ins:
1 cup corn kernels (fresh or frozen)
1/2 cup chopped green onions or jalapeños
1 cup shredded cheese (cheddar or Monterey Jack)
Instructions
Step 1: Preheat the Oven
Preheat Oven: Preheat your oven to 400°F (200°C).
Step 2: Prepare the Batter
Mix Dry Ingredients: In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
Combine Wet Ingredients: In another bowl, mix the milk, oil (or melted butter), and eggs until well combined.
Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. If using, fold in corn kernels, green onions, and cheese.
Step 3: Bake the Cornbread
Prepare the Baking Dish: Grease a square or rectangular baking dish (8x8 or 9x13 inches) or line it with parchment paper.
Pour Batter: Pour the cornbread batter into the prepared dish, smoothing the top.
Bake: Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Step 4: Serve
Cool and Cut: Allow the cornbread to cool for a few minutes before cutting into squares. Serve warm, ideally with butter and honey.
