" STUFFED TOMATO MASALA "
Serves 2
:
- Tomato 4
- 1 cup mixed vegetables (cauliflower, peas, carrot, onion, mashed potatoes) finely chopped.
- Tomato 1 for gravy.
- garlic 4 cloves
- Ginger grated 1/2 tspn
- green chillies 2
- onion 2
- salt
- cumin 1/4 tspn
- coriander powder 1/2 tspn
- turmeric powder 1/4 tspn
- kitchen king 1/4 tspn
- Fresh cream / malai 3-4 tbspn
- kasturi methi 1tspn
- red chilli powder
- cumin powder 2 pinch

:
1- Take 4 tomatoes. Cut the top, scoop out the middle part of the tomatoes. Apply pinch of salt and keep it on fridge for 20 mins.
2- stuffing: Take a pan , add oil, add vegetables. Saute it till cooked well. Add salt and pepper. Add a pinch kitchen king . Cool it completely. Now fill the stuffing inside the tomatoes.
3- Heat a pan. Add oil. Now add the stuffed tomatoes horizontally. And cover the lead till cooked. You can also cook the stuffed tomatoes in microwave for 5-10 minutes.
4- Gravy: Take a mixture grinder jar. Add onions -2, tomato -1 ,garlic, ginger and green chillies. Grind it well. Now take a pan , Add oil, add cumin seeds and gravy. Add salt and turmeric powder. Saute it well till oil seperates. Now add all dry masalas and kasturi methi. Add malai and 1/4 cup water. Cover the lead for 2 minutes. Add stuffed tomatoes.
5 - Garnish it with fresh cream and coriander leaves.
6- serve hot with parathas or steamed rice.

" BREAD DHOKLA "
Serves 2
:
- Bread 8 slices
- Hung curd 1/2 cup
- green chillies 4
- ginger 1 finger sized
- salt
- mustard seeds 1/4 tspn
- turmeric powder a pinch
- curry leaves 7-8
- green chillies 2-3 for tadka

:
1- Take a grinder. Add ginger and chillies. Grind it roughly. Mix it with hung curd and add salt.
2- Take 4 slices, spread the curd mixture over it , cover it with another slice. Cut it into 4 equal pieces.
3-Heat a pan. Add oil. Add mustard seeds, curry leaves, green chillies and turmeric powder. Now put the stuffed bread over the tawa. Roast it both the sides. Garnish with some fresh coriander leaves.
4- serve hot with tea or coffee.

"MATAR PARATHA "
Serves 4
:
- green peas 2 cups
- green chillies 4-5
- ginger grated 1tspn
- oil 1 tbspn
- cumin seeds 1/4 tspn
- hing a pinch
- garam masala 1/4 tspn
- salt to taste
- turmeric powder 1/4 tspn
- red chilli powder 1/4 tspn
- coriander powder 1/2 tspn
- cumin powder 1/4 tspn
- amchoor 1/4 tspn
- ghee

:
1- Take a grinder jar, add peas , ginger, and chillies. Grind it roughly. (See picture below ).

2- Heat a pan. Add oil . Add cumin and hing. Now add the paste. Add salt and turmeric powder. Saute it well for 5 minutes. Now add rest of the dry masalas. Saute it well for more 5 -7 mins . Let it cool.

3- Take a coin sized wheat dough . Stuff it with the ready masala. Heat a tawa. Fry the paratha both sides using ghee /butter.

4- serve hot with Tamatar chutney /green chutney /curd & pickel.

" CHOLE WITH CHILLI TANDOORI"
Serves 4
:-
- Chole (soaked & boiled ) 2 cups
- potato boiled 1
- onion 2
- Tomatoes 2
- Garlic 7-8 cloves
- Ginger 1 inch
- green chillies 3-4
- bay leaf 1
- cardamom 2
- turmeric powder 1/4 tspn
- coriander powder 1tspn
- red chilli powder 1tspn
- chole masala 1/2 tspn
- tamarind chutney 1tbspn
- kasturi methi 1 tspn
- Hind 1pinch
- cumin & mustard seeds (mixed) 1tspn
- oil 1 tbspn
- curry leaves 7-8 leaves
- water 1 1/2 cups

:-
1- Take a grinder jar. Add onions, tomatoes, chilles, ginger ,garlic, cardamom and grind it well.
2- Heat a pan . Add oil , let the oil heat, now add cumin and mustard seed , hing, bay leaf. Now add the onion tomato paste. saute it well untill oil seperates. Now add tamarind chutney /imli chutney.
3- Now add salt and turmeric powder. Add all dry masalas & kasturi methi. Saute it well.
4- Now add crused boiled potato and boiled chole. Saute well. Now add water. Cover the lead for 5 minutes. Garnish with onion rings , coriander leaves and lemon slice.
5- Serve hot with your choice of paratha or steamed rice.

:-
- green peas 1 bowl
- paneer cubed 200 gm
- onion finely chopped 2-3
- tomatoes finely chopped 2
- oil 1tbspn
- cumin
- green chillies 5-6 diced
- garlic 7-8 cloves finely chopped
- ginger grated 1 tspn
- kasturi methi 1 tspn
- turmeric powder 1/4 tspn
- coriander powder 1 tspn
- chilli powder 1 tspn
- garam masala 1/2 tspn
- malai /fresh cream 2 tbspn
- water 1/2 cup

:-
1- Heat a pan. Add oil. Add cumin. Add ginger, garlic and chillies. Saute it well for a minute. Now add onions and mix it well. Cover the lid for 2-3 minutes.
2- Now add tomatoes. Cover lead for another 2 minutes. Add salt and turmeric powder. Add rest of the dry masalas. Kasturi methi.Add fresh cream /malai.
3- Now add boiled peas. Saute it well. Atlast add paneer and water. Cover the lid for 5 minutes.
4- serve hot with parathas or steamed rice.

"SWEET CORN SOUP"

Serves 6
:
- 1 tin sweet corn (cream style)
- 1 cup finely chopped vegetables (cabbage,onions, carrot, capsicum & beans)
- ginger grated 1/2 tspn
- green chillies finely chopped 4
- garlic 6-7 clove finely chopped
- corn flour 2 tspn
- water 5-6 cups
- vinegar 2- 3 tspn
- salt
- pepper 1/4 tspn
- sugar 1 tspn
- butter 2 tspn
- coriander leaves for garnishing

:
1- Heat a pan. Add oil /butter. Add ginger, garlic and chillies. Saute it well for 1 minute. Add vegetables , saute it for more 5 minutes. Cover the lid.

2- Now add 1 tin of sweet corn. Mix well. Add water . Let it boil. Add vinegar.

3- Take a bowl add 1/2 cup water and 2 tspn corn flour and mix it well. Now pour it into the boiling soup. stir it well after pouring to prevent lumps. Add salt, pepper and sugar. Let it cook at low flame for more 5 -10 minutes. Garnish with some fresh coriander leaves.

" PANEER - PAPAD BHURJI "
Serves 4
:
- onion 2 finely chopped
- capsicum 1 finely chopped
- tomato 1 finely chopped
- panner crushed / chena 1 cup
- salt
- oil 1 tspn
- ginger garlic paste 1 tspn
- turmeric powder 1/4 tspn
- coriander powder 1 tspn
- red chilli powder 1 tspn
- Fresh cream / malai 2-3 tspn
- moong dal papad 2
- sugar 1/2 tspn
- kitchen king 1/2 tspn
- kasturi methi 1 tspn
- milk 1/4 cup

:
1- Heat a pan. Add oil. Add ginger garlic paste. Saute it. Add onion and capsicum. Saute it well. Cover it for 3-4 mins .
2 - Now add tomatoes. Add salt and turmeric powder. Cover the lid for another 2 minutes.
3- Add coriander powder, red chilli powder, kasturi methi and kitchen king . Now add crushed paneer , fresh cream and sugar.
4- Now add 2 roasted crused papad in the ready veg. Add 1/4 cup milk. Cover the lead for 2 minutes. Garnish with some roasted crused papad.
5- serve hot with parathas or steamed rice.

Serves 2
:
- penne pasta boiled 2 cups
- butter 1 tbspn
- chilli ginger garlic paste
- 2 onion thickly chopped
- 1 capsicum thickly chopped
- 1/2 cup boiled American corn
- 3 tbspn spicy pasta sauce
- 2 tbspn veg mayonnaise
- 1 tspn Italian seasoning
- 1 tspn chilli flakes
- salt
- pepper
- 1 cheese cube grated

:
1- Take a pan , Add butter , add chilli ginger garlic paste. Saute it well. Add onions and capsicum. Saute it well. Add American corn. Mix well.

2- Now add boiled pasta and saute it well.
Now add pasta sauce and mayonnaise. Add Italian seasoning, salt, pepper and chilli flakes. Add grated cheese.

3- serve hot .
