Carrot nuts kalathappam
Ingredients :
1 and 1/2 cup Soaked raw rice
1/2 cup cooked rice
1 cup of carrot
1 tbsp ghee
I tsp of cardamom powder
3/4 cup of jaggery
1 chopped onion
2 tbsp grated coconut
1 grated carrot
5 chopped badam and
5 cashew nut
Method:
To make carrot nuts kalathapam, grind raw rice, cooked rice and cardamom power together finely with 1 cup of water and keep it aside. Next boil 1 cup of carrot in half cup of water and make jaggery syrup by boiling 3/4 cup of jagger in 1 cup of water. Now together grind boiled carrots and jaggery syrup finely. Now add this mixture gradually in rice mixture and blend it thoroughly...... Then in a cooker add 1 tbsp of ghee and add onion, coconut, nuts and grated carrot then add the batter and close the lid of cooker without whistle in low flame..... In 5 to 10 minutes the steam will come then after 5 minutes off the stove.... Then after it completely cools down you can take the sweet carrot kalathapam out of the cooker in perfect round......
