Recipe (serves 4):
4 (6-ounce) salmon fillets
1 tablespoon olive oil
Salt and black pepper to taste
4 tablespoons unsalted butter, melted
4 cloves garlic, minced
2 tablespoons fresh lemon juice
1 large lemon, thinly sliced
1 bunch asparagus, trimmed
Fresh parsley, for garnish
Instructions:
Preheat oven to 400°F (200°C).
Pat salmon fillets dry with paper towels. Season generously with salt and pepper.
In a small bowl, whisk together melted butter, minced garlic, lemon juice, salt, and pepper.
Line a large baking sheet with parchment paper or foil. Arrange salmon fillets in the center and asparagus around them.
Drizzle the butter sauce over the salmon and asparagus. Top with lemon slices.
Bake for 12-15 minutes, or until the salmon is flaky and cooked through.
Garnish with fresh parsley before serving.
Tips:
For extra flavor, you can marinate the salmon in the butter sauce for 15-20 minutes before baking.
Make sure to trim the woody ends off the asparagus spears before cooking.
You can also add other vegetables to the pan, such as broccoli or cherry tomatoes.
