I could eat this crunchy Italian cucumber salad every single day! 🥒🍅😍 It’s fresh, tangy, colorful, and ridiculously easy to throw together. Crisp cucumbers, juicy tomatoes, red onion, zesty banana peppers, and black olives tossed in creamy Italian dressing make the perfect side dish for BBQs, meal prep, or a quick refreshing lunch!

To make it, chop 2 medium cucumbers and 2 large tomatoes into bite sized pieces. Add ¼ sliced red onion, ½ cup sliced banana peppers, and ½ cup sliced black olives. Pour in ¼ cup creamy Italian dressing and gently toss everything until the vegetables are coated. Season with a little black pepper and Italian seasoning if you like, then refrigerate for 15 to 20 minutes so all those delicious flavors come together. You can also add mozzarella cubes or chickpeas to make it your own!

Would you add feta cheese, mozzarella, or keep this salad just the way it is? 😋👇

Ingredients

• 1 lb ground beef
• 1 tsp olive oil, if needed
• 2 tbsp taco seasoning
• ¼ cup water
• 4 cups chopped romaine lettuce
• 1 cup shredded cheddar cheese
• 1 cup diced tomatoes
• ½ cup sliced pickled jalapeños
• ½ cup sour cream

Instructions

1. Heat a skillet over medium heat. Add the ground beef and cook for 7 to 10 minutes, breaking it apart as it browns. Drain excess fat if necessary.
2. Stir in the taco seasoning and water. Simmer for 2 to 3 minutes until the beef is flavorful and the liquid has mostly reduced.
3. Divide the chopped lettuce between serving bowls.
4. Add the seasoned beef, diced tomatoes, and shredded cheddar.
5. Top with sliced jalapeños, salsa, and generous spoonfuls of sour cream.
6. Finish with crunchy tortilla chips just before serving so they stay crisp.

✨ My tip: Let the beef cool slightly before adding it to the lettuce, and add the chips at the very end for the best crunch.

This ground beef cucumber salad is such a simple high-protein meal, but the combination is seriously satisfying. Juicy cucumber, seasoned ground beef, cherry tomatoes, red onion, and a little chili seasoning come together for a fresh, savory bowl that works for lunch, dinner, or meal prep.

Ingredients:
6 oz lean ground beef
1½ cups cucumber, chopped
½ cup cherry tomatoes, halved
¼ small red onion, thinly sliced
1 tbsp olive oil
1 tbsp fresh lemon juice
¼ tsp garlic powder
¼ tsp smoked paprika
¼ tsp red pepper flakes
¼ tsp salt
¼ tsp black pepper

Brown the ground beef in a skillet with garlic powder, smoked paprika, salt, black pepper, and red pepper flakes until deeply browned and cooked through. Let it cool slightly so it doesn't wilt the vegetables.

Add the cucumber, cherry tomatoes, and red onion to the container. Top with the seasoned beef, drizzle with olive oil and fresh lemon juice, then gently toss everything together.

Serve immediately or chill for a few minutes before eating. Would you add avocado to this one?
