You have to be experienced. All depends on the climate conditions. In hot climates you should not allow concrete to dry so in this case you should spread wet hessian to cover the slab. If you apply water there is likelyhood of excess water interfering with water cement ratio. You should maintain hessain cloth for 24 hours till concrete achieves final set and then you can spray water for curing by building mortar bunds. Projects use curing films almost immediately after bleeding water dries up.
