大家早晨啦!繼上次跟大家介紹了第四豆「太陽之日」,今次我們為大家帶來了第五豆,也是日晨的第二款的拼配豆,「仲夏莓果」。

「仲夏莓果」是一款由Ethiopia Guji 加上Ethiopia其他地區的咖啡豆組成的。既結合了Ethiopia Guji 帶有的鳳梨,草莓,芒果乾,糖蜜,口感滑順,亦帶有Ethiopia的獨特花香、柑橘味和明亮的酸質,酸酸甜甜,十分合適炎炎的夏日。

順帶一提,我們的實體店在8月1日正式營業,希望到時可以看到大家。到時見!

Good morning everyone. Last time we talked about our fourth coffee bean, The Day of the Sun. Now we’re excited to share our fifth bean, Summer Blend — the second flavor in our Sunny Morning series.

‘Summer Blend’ is a blend of Ethiopian Guji and beans from other parts of Ethiopia. It combines the smoothness of pineapple, strawberry, dried mango and molasses from Ethiopia Guji, with the distinctive floral, citrus flavours and bright acidity of Ethiopia, which is sweet and tart and perfect for hot summer days.

當烘焙時間短,咖啡豆較少脫水,咖啡出來的味道會偏酸、亦較少苦味:中烘焙的咖啡豆會帶出咖啡的甜味,酸度會降低;之於深烘焙則大大減低咖啡豆的酸味及甜味,同時苦味會增加。

而因應不同的咖啡豆,產生出來的風味也會有不同,要多試多嘗,就可以找到適合自己的咖啡豆。

The roasting of coffee beans is much like life—over time, it develops acidity, sweetness, and bitterness.

When the roasting time is short, the beans retain more moisture, resulting in a brighter, more acidic flavor with less bitterness. Medium roasting brings out the coffee’s natural sweetness while reducing its acidity. As for dark roasting, it significantly diminishes both acidity and sweetness, while intensifying the bitter notes.

Different coffee beans produce distinct flavor profiles, so tasting a variety will help you discover the one that suits you best.

上次提及咖啡豆的處理,今次就講講咖啡豆的烘焙啦。

烘焙咖啡就係將咖啡生豆加熱到熟透嘅過程,原理有啲似我哋焗蛋糕; 在咖啡烘焙的過程中,豆內的水份會被蒸發而令咖啡豆膨脹,並產生焦糖化作用增加咖啡口感同餘韻甜度。隨著溫度不斷提升,咖啡豆的顏色慢慢變深,咖啡豆內植物酸質因變化而產生不同香味,稱為「梅納反應」,這個過程會影響咖啡的風味和香氣。所以咖啡烘焙的過程其實對飲家嚟講非常重要!

此外,咖啡烘焙的歸類,簡單以不同的烘焙程度分為:淺烘焙、中度烘焙及深度烘焙等,同一批咖啡豆,風味會隨之而不同。烘焙的程度取決於烘焙所需的時間及火力大小;簡單來說,時間愈久、完成時溫度愈高,烘焙的程度就會愈深。

之於哪一種烘焙程度較好,其實就取決於你喜歡的咖啡風味。未來我哋都會組織關於咖啡烘焙的工作坊,俾大家親身品嚐不同烘焙程度的咖啡和觀看烘焙過程,記得留意消息更新啦!

Last time we talked about coffee bean processing, this time let’s share coffee roasting!

Roasting coffee is the process of heating raw coffee beans until they are fully cooked—similar to baking a cake. During roasting, the moisture inside the beans evaporates, causing them to expand, while caramelization enhances the coffee’s texture and lingering sweetness. As the temperature rises, the beans gradually darken, and the plant-based acids undergo changes that produce various aromas, a phenomenon known as the “Maillard reaction.” This process will affect the coffee’s flavor and fragrance, making roasting crucial for coffee lovers!

Additionally, coffee roasting is broadly categorized into different roast levels: light, medium, and dark. The same batch of beans can develop different flavors depending on the roast. The degree of roasting depends on the duration and intensity of heat applied—simply put, the longer the time and the higher the final temperature, the darker the roast.

As for which roast level is best, it really depends on personal preference! In the future, we’ll organize coffee roasting workshops where you can taste coffees of different roast levels and observe the roasting process firsthand. Stay tuned for updates!

先前為大家介紹三款單一產地(single origin)的咖啡豆。今天就介紹日晨仲夏豆系列中第一支配方豆,也是我們的第四豆——「週日——太陽之日」。

太陽之日這支豆是曼特靈和巴西的綜合豆,是一款非常經典又十分流行的咖啡。它結合了巴西的平衡風味堅果,以及曼特靈的悠長餘韻。是次拼配是以先烘焙後綜合的方式去混合,確保兩種咖啡豆在完美融合的同時,仍能保留各自的特色風味。

值得一提的是,由7月15日開始,太陽之日更會作為實體店的精選咖啡,大家一起來店品嚐一下這款咖啡吧,到時見。

We have introduced three single origin coffee beans before. Today, we will introduce the first blend in the Sunday Morning Midsummer series, which is also our fourth bean—Day of the Sun.

The Day of the Sun is a blend of Mandheling and Brazil beans, making it a classic and very popular coffee. It combines the balanced nutty flavor of Brazil beans with the long-lasting aftertaste of Mandheling beans. This blend is mixed using a post-roasting method to ensure that while the two types of coffee beans are perfectly integrated, they still retain their unique flavors.

It is worth mentioning that starting from July 15th, the Day of the Sun will be featured as a specialty coffee in our physical store, and we hope to see you there.
