Gluten free chocolate muffin
Healthy chocolate dessert

A tin of beans might be the last ingredient you’d expect in a chocolate muffin.

Drain and rinse a can of beans to get around 240g of beans. Add one small banana, a tablespoon of sugar (or two dates), 2–3 tablespoons of milk, a pinch of salt and 2 tablespoons of rice flour. Oat flour works just as well.

Blend until smooth, divide between small ramekins or use one larger dish, then top with 30–40g of dark chocolate.

Microwave for 3–3½ minutes in small moulds or up to 5 minutes in a larger one.

The result is rich, chocolatey and naturally gluten free. No one will guess the secret ingredient.

Caramelised apple tart
Easy apple dessert

A couple of tart apples, a spoonful of light muscovado sugar (dark soft brown sugar works beautifully too), a pinch of salt and a little butter.

Let the sugar melt, toss in the apples and coat them in that rich caramel. Top with ready-made puff pastry and pop it into the oven.

That’s it.

The result is sweet, slightly tart and filled with the most incredible aroma. The kind of dessert that makes the whole kitchen smell like autumn, no matter what time of year it is.

No oven. No baking. No one will believe it.

Ingredients:
• 1 pack Custard Cream biscuits
• 300 ml double cream
• 2 tbsp icing sugar
• 2 tbsp sour cream (optional)
• 150–200 g strawberries

Whip the cream with the icing sugar.

Fold in the sour cream if you like a little tang.

Lay the biscuits in rows on cling film. Spread over the cream and add the strawberries.

Roll it up, wrap tightly and chill.

Leave it overnight if you can. The biscuits soften, the cream sets and it turns into a proper cake without ever seeing an oven.

No baking. No complicated steps. No stress.

Just slice, serve and enjoy.
