Our heartfelt gratitude to the Embassy of Vietnam in Türkiye and the Vietnamese Cultural Culinary Association Hiệp hội Văn hóa Ẩm thực Việt Nam for hosting, organising and giving Saigon Lotus’ Head Chef the wonderful opportunity to join hands in showcasing the finest of Vietnamese street food to over 400 distinguished guests of the Ambassador in Türkiye, as we came together to celebrate Vietnam’s Independence Day.

It was such an emotional and unforgettable event — a beautiful celebration of Vietnam, our culture, our cuisine, and the connections that bring people together. 🇻🇳❤️

Last week, after a lovely local customer, Louise kindly shared her food review of her dining experience at Saigon Lotus in the Middleton, Manchester M24 community group, alongside the recent “Best Phở outside of Vietnam” featured by Manchester’s Finest and BritLife, Saigon Lotus was blessed with an incredible influx of new and growing Vietnamese food lovers to our cultural house/restaurant. ❤️

After their meals, a local lovely couple shared these beautiful words with us:

🇻🇳✨ FROM MANCHESTER TO TURKEY — HOW DID THI, FOUNDER & HEAD CHEF OF SAIGON LOTUS, RECEIVE THIS SPECIAL INVITATION?

Did you know that Thi — founder of Saigon Lotus Middleton — has been honourably invited by the Vietnamese Ambassador in Türkiye and Vietnam Culture and Culinary Association (Hiệp hội Văn hóa Ẩm thực Việt Nam) to join a team of leading chefs from Vietnam to showcase the finest of Vietnamese finest cuisine to embassy guests this weekend, as Vietnam celebrates its Independence Day? 🇻🇳🇹🇷

But how did this special invitation come about?

It started with a bowl of phở — and a much bigger dream. 🍜❤️

Over the summer, Thi and her team embarked on an international cultural journey, travelling across Europe and bringing Vietnamese cuisine, cooking classes and cultural conversations to communities in Italy, Switzerland, France, Belgium, the Netherlands and the UK.

At the heart of the journey was phở — not simply as a delicious Vietnamese dish, but as a living expression of Vietnam’s history, family traditions, hospitality and cultural identity.

Through hands-on phở cooking classes, cultural talks and connections with Vietnamese restaurants and communities across Europe, Thi and her team have been working to help raise the profile and cultural value of Vietnamese phở internationally, with the long-term aspiration of seeing phở recognised on UNESCO’s Representative List of the Intangible Cultural Heritage of Humanity over the last year and a half.

This journey has also received attention in Vietnam, including coverage by Báo Thanh Niên and national television VTV4 which highlighted Thi’s European journey and her efforts to elevate Vietnamese cuisine and the cultural story behind phở. (Báo Thanh Niên)

And then came an unexpected and deeply meaningful connection…

🇹🇷 TURKEY.

The work of taking Vietnamese culture beyond the restaurant table — sharing our food, our stories and the values behind our cuisine — opened another door.

And now, Thi has the honour of joining distinguished Vietnamese chefs in Türkiye to represent Vietnamese culinary culture at an event hosted in connection with Vietnam’s 81st National Day celebrations.

From a small family-run Vietnamese cultural house in Middleton, Manchester…

To cooking classes across Europe…

To telling the story of phở internationally…

And now to the Vietnamese Embassy in Türkiye. 🇻🇳❤️🇹🇷

Sometimes, one invitation is not the beginning of a journey.

It is the result of everything you have been quietly building along the way.

Thi’s journey is a reminder that when you cook with love, preserve your culture, share your story and keep showing up for your heritage, you never know where that journey may take you.
