Today's advent gift is Jo's own mincemeat and mince pie recipe!

Mincemeat (Jo made hers in October with the last of the apples from the garden)
Makes one large batch which will last for Christmas!

4lb apples
brown sugar
1lb vegetarian suet
Rind and juice of two lemons
Rind and juice if two oranges
1 tsp salt
1 tbsp cinnamon
1 tsp ground cloves
1 whole nutmeg ground
1 tbsp mixed spice
1/2 lb mixed peel
2lbs currants
2lbs sultanas
1 Gill brandy

Pastry (also makes delicious rich roll cookies!)
Cook at 170°c fan oven or 180°c normal oven!

Cream:
1 cup butter
2/3 cup sugar

Beat in:
1 egg
1tsp almond extract

Combine and add:
2 1/2 cups plain flour

Chill for 3-4 hours in the fridge before rolling.
Makes 24 mince pies.

Brush with milk or egg white to make them golden.

Note for potters: Jo has made lots for this week's classes!

The wonderful thing about being a potter is that you can make the perfect pots for your favourite bakes.

This pie dish is shaped for the perfect size slice and serves ten.

We really pride ourselves on making pots that are functional and beautiful. Jo’s shapes and designs have been developed over many years.
