UNA is a culinary project which consist to creating a restaurant with only one table. The innovation of the Private dining room.

Every night is different due the events are tailor-made experiences curated by chef Martin Milesi. Created by Chef Martín Milesi, UNA will represent a strong desire to promote the cultural diversity of Latin American cuisine and will consist of a journey through the whole region. The different dishes will be linked to traditional ingredients featuring classical dishes and some more conceptual. UN

A was born from the wish to change our contact with the consumer. At UNA there is a total connection between gastronomy and client. While the kitchen is working for just one table, the guests at UNA will have the gastronomic experience of being attended to exclusively. Like all spheres of activity the restaurant business has evolved and changed over time. Under the slogan “Just One Table” we have created a new business model where the raw materials personally correspond to each guest, for whom the Chef buys produce specifically. The dining room at the Clocktower of St. Pancras Station generates an intimate and exclusive atmosphere. The guests may feel they are at home whilst at the same time in a restaurant environment. At UNA we want the Chef to know who they are cooking for. We believe that many restaurants, driven by the need for and obsession with growth have lost contact with the client, as have many kitchens which never get to know the people who they are cooking for. We see the re-emergence of the sensitivity and service which were offered at banquets prior to the creation of the restaurant in the 18th Century.

Anyone can book a private dining room.

Restaurants everywhere have them: a table behind a door, a curtain pulled aside, a corner of the restaurant slightly removed from the noise. A comfortable space for a celebration, a meeting, a dinner with friends.

And there is nothing wrong with that, but what we do is something else entirely.

At UNA, when you reserve the One table Experience, you are not simply booking a room. We open the St Pancras Clock Tower exclusively for you.

There is no restaurant beyond the wall.

No dining room next door.

No other tables being served.

Just you.

You are not hidden in a forgotten basement that might once have been a storage room. Instead, you climb into the tower of one of the most extraordinary buildings in London, a place that has watched the city move for more than a century. Above the station, above the noise, above the rhythm of trains and crowds, time slows down.

And the entire evening is built around your table.

A private dining room is a space. This is an experience. A dinner inside a clock tower, in one of the most beautiful buildings in London.

And once the door closes behind you, for a few hours, the tower—and time itself—belongs only to your table.
