I’ve never been the biggest fan of dessert-style cocktails, especially anything heavy on coconut, but I was recently challenged to create a drink to celebrate Philippine Independence Day on June 12th, using a native ingredient.

Enter Ube 💜

This vibrant purple yam is iconic in Filipino desserts, so I decided to lean into the brief and create something indulgent, elegant and menu-worthy.

Courvoisier VS Brandy
White Crème de Cacao
Coconut Cream
Ube Syrup
Vegan Foamer
Dried Hibiscus garnish

Silky, aromatic and visually striking — a true celebration in a glass.

Rolling into the Festive Season!!! Winter Berry Whiskey Sour with Sage!! Muddled berries with fresh sage leaf and sugar syrup, add a large measure of bourbon, lemon juice and vegan foamer - dry shake, add some ice and shake again - into a rocks glass double strain and garnish with a fresh berry and sage leaf!!

The Fallen Angel is a classic Prohibition-era cocktail made with gin, celebrated for its crisp, herbaceous notes and bright citrus character. It gained prominence after being included in Harry Craddock’s 1930 Savoy Cocktail Book.

60ml
15ml lemon juice
15ml 2:1 sugar syrup
2 drops of bitters
1/2 bar spoon Crème de menthe

Add all ingredients to a tin, with ice, hard shake for 10/15 seconds, fine strain into a chilled martini glass! Enjoy!!

Another Favourite of mine this season is the Redhook Manhattan. A modern riff on the classic Brooklyn Cocktail, first created between 2003–2005 by Vincenzo ‘Enzo’ Errico at Milk & Honey in Manhattan.

We infuse sweet vermouth with orange peel and fresh Kentish cherries for 48 hours, giving the drink a warm, spiced character reminiscent of mulled wine, while honouring its Brooklyn namesake.

2oz 3yo Rum
1oz fresh pineapple juice
1oz fresh lime juice
0.5oz pineapple simple syrup

Shaken with ice, fine strained into a vintage coupe glass. Enjoy
