RECIPE -
APPLE GINGER & CHILLI JAM -
Equal quantities of wine, sugar & water with a splash of white wine vinegar (white wine as this is less of a pickle & more of a jam/preserve)
Spices - you choose, you know what you like & how much you like to use.
I went for cardamom, mace & coriander.
Reduce the syrup stock by half along with the spices & some fine chopped garlic & ginger. Add your fruit/veg & cook into the mix until they’re tender. Stir in some chilli paste, home made or shop bought….you do you. Allow to chill completely before you store
