The stunning star shaped, vibrant blue flowers of Borage, droop from the heavy flower heads on their extremely hairy stems, oblivious to their powerhouse of goodies!
In its past, the plant was widely used to chase away the blues, It’s a great calming herb and can be used to help balance cortisol levels in your body.
Eating borage regularly can help balance the hormones, particularly those associated with PMS and menopause, and helps to stabilise the menstrual cycle.
The anti oxidant properties help protect from aging, chronic disease and suppress allergic responses.

Every little piece is edible, the leaves have a similar taste to cucumber and can be eaten raw in salads or cooked. The stems are great fried up as tempura, the seeds contain an omega-6 fatty acid and the flowers look amazing in a salad or as part of a decorative ice cube for summer drinks.

A hidden gem amongst the skylarks singing overhead, the meadowsweet flowering at your feet, the barley swaying in the wind and then it appears! The Chattri was built to honour the Hindus and Sikhs who died during active service alongside British troops in World War One. Many were hospitalised in Brighton. Those who died were carried out to this peaceful place on the South Downs where their bodies were cremated and their ashes scattered at sea. Chattri means umbrella and symbolises the protection offered over the memory of the dead.
