𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
450g FRUTO Strawberry Jam
225g softened butter
140g sugar
1 egg - room temperature
450g plain flour
3 tsp baking powder
½ tsp salt
Directions:
Mix the softened butter and sugar together until light and creamy. You can use either a stand mixer or electric hand mixer.
Beat the egg in a separate bowl and add to the butter and sugar, mix well.
In a separate bowl, mix the flour, baking powder and salt together.
Combine the dry ingredients with the butter, sugar and egg mix. Work the mixture together with your hands until you have a very stiff dough. It is a dry mix, but be patient, it will come together.
Once the dough is mixed, roughly shape into a sausage of about 4 cm in diameter, wrap in cling film and place in the fridge for at least an hour.
Preheat the oven to 180C and line a 20cm x 20cm baking tin with baking paper. Slightly overhang the paper so you can easily lift your bake out later.
Cut off ¾ from your dough sausage.
Grab a large plate/chopping board and grate the larger piece of dough with the roughest side of a cheese grater.
Spread the grated dough into the bottom of your baking tin.
Place the jam in a microwave safe bowl and briefly microwave to make it easier to spread. Evenly spoon the jam over the crumb base.
Grate the remaining ⅓ of dough the same way as you did for the base. Sprinkle the crumbs over the top of the jam.
Bake for 25min - 30min until the edges turn a light golden colour.
Leave the tin to cool down entirely before lifting your bake out of the baking tin with the help of the overhanging baking paper. It's crucial not to attempt this until your bake has completely cooled down.
Cut into 12 squares or bar and serve this delicious delicacy. 😉
