Our good friend Claus from Claus Toksvig Kjaer | WHISKY & ANIMATION stopped by to sample a few of our casks with us. A unique experience, enjoyed straight from the cask at cask strength.

Good whisky starts with great ingredients. Respecting them means making the most of every part of the process.

After distillation, our spent organic barley is returned to local organic farmers, where it becomes nutritious livestock feed instead of waste.

A simple decision, but one that reflects how we approach everything we do at Copenhagen Distillery.

At Copenhagen Distillery, we work with carefully selected Hungarian oak casks, chosen for the way they shape our spirit throughout maturation. From toast level to time in cask, every decision influences the whisky’s final character.

For RAW, it’s where our new make meets virgin Hungarian oak. A combination that allows the character of our organic Danish barley to remain at the forefront, while adding layers of spice, vanilla and gentle sweetness as the spirit develops.

REFINED matures in virgin and uniquely seasoned Hungarian oak casks, bringing structure, depth and complexity to the spirit.

RARE gives us the freedom to explore. Different grains, distinctive cask types and limited releases form a platform for experimentation, where each expression tells its own story.

Our new make begins with Danish organic barley, the foundation of most of our whiskies.

From the still, it carries the character of the grain in its purest form, revealing a spirit that is vibrant, raw, and full of potential. Flavours are already present here, shaped by fermentation and distillation, and destined to evolve long after time and oak begin their work.

Today is World Gin Day.

A perfect excuse to gather with friends, raise a glass, and enjoy good spirits in good company.

For us, that means Orange Gin. Built around juniper, sweet orange peel, cardamom, and citrus, it was made for long summer evenings, garden tables, and conversations that last a little longer than planned.

Behind every release are countless tastings.

Checking casks, monitoring development, and looking for the moment when balance, aroma, and structure come together naturally.

Ageing is not about waiting as long as possible. It is about knowing when the whisky is ready.

And every now and then, friends of the distillery happen to visit at just the right moment, getting a chance to sample a cask before it becomes part of a future release.

We are back from the Hong Kong Whisky Festival 2026 and now fully rested.

This World Whisky Day was something special. We launched our latest RARE Whisky, Orange Blossom, a unique single cask expression shaped by an unexpected interaction between organic Danish single malt and a cask that previously held our Orange Gin, resulting in subtle layers of fresh citrus oils and a whisky unlike anything we have made before.

Together with Master Distiller Lasse Öznek and Ken Grier, Ex-Macallan Whisky Legend and Drinks Guru, we hosted a one-of-a-kind masterclass, where we guided guests through a wide range of 10 whiskies that defy convention. From our core expressions to very unique releases, including selections such as Blood and Bone and other very rare bottlings.

We also hosted a second masterclass pairing selected Copenhagen Distillery whisky expressions with Danish specialities, including new make infused sausages from Folkets Madhus, cheese from Arla Unika, and chocolate from Bülow.

Thank you to everyone who joined the masterclasses, stopped by our booth, and shared this World Whisky Day with us in Hong Kong.

Each cask develops differently. Some evolve quickly, others need more time. We follow the whisky, not the calendar.
