Equally passionate about traditional recipes and modern taste, is continuously looking for novel yet delicate flavours. Seduced by this commitment to innovation, Museum of O asked PAUL LAFAYET to develop a treat that would connect their French savoir-faire with a Chinese ingredient.

Incorporating jasmine as one of the ingredients in the flavoured crème brûlée, PAUL LAFAYET created an “edible piece of art”, triggering the five senses. The scent of the heated sugar, the sound of the caramel cracking under the spoon, the soft texture of the crème, the light taste of the jasmine, and the elegant look of a hand-crafted pastry all contribute to complete experience.

Morpheus Qiu’s vision of a futuristic crème brûlée factory infused with bright colors and amusement park elements became a reality as he developed the 3D animation which marries Chinese and French traditions. Every step necessary to cook the crème brûlée is depicted in this wonderland factory assembly line.The egg first is broken to separate the yolk only, which is then mixed with the crème brûlée. Jasmine tea is added to the mix to replace the traditional vanilla in this recipe. The crème brûlée is then let to rest in a merry go round for a few hours before going to the oven. The last step of the preparation of the dessert, adding sugar and caramelising it, are depicted in the video, before being done live by the chef preparing the dessert for the visitors.
