Leftover Christmas dinner Yorkshire pudding Burrito.

This was way way easier than i thought it would be, and twice as delicious.

Do not let all those Christmas dinner leftovers go by without making this!!

Ingredients
Any leftover chrim dinner

YPuds (yields 12 big boys / 5 huge boys

240g plain flour
5g salt
400ml full fat milk
8 eggs

Mixmixmixmix.

Make sure you preheat your oil - that’s the main thing. I baked these until golden brown (not too brown) - around 18 minutes

Brussel sprouts are disgusting, it’s true. But here I try and succeed in making some tolerable versions.. Version 2 & 3 are actually edible. V3 was, dare I say, good…

If you must have these on your plate this Christmas - just make sure they are swimming in some or all of: garlic, cheese, bacon, balsamic vinegar, maple syrup

Some big South African sausage to start your Wednesday -

Borewors with some tomato gravy/salsa - This was really delicious - I think I did a pretty good job keeping it a big SA traditional - but if there was something wrong I am absolutely sure I will be told .

If I had a charcoal BBQ it would have been x100 better - but alas.

Boxty Quesadilla. 🇮🇪🇲🇽

Did we need this Irish/Mexican fusion? No.

Did it take ages, and a lot of work, Yes.

Would I do it again? Probably not.

Was it delicious, Yes.

Did it pair extraordinarily well with a crisp and delicious .ra.beer lager?. You bet your sweet ass it did.

Re-cipe
Filling:
• 300g chicken thigh
• 1 bell pepper
• ½ a big onion
• 2 tbsp taco seasoning, I used a mix from the Shtates, but you’ll be good with 1 tsp each of garlic powder, chili powder, chipotle (if you’ve got it), cumin, sugar, oregano + salt.

Pico de (kind of) Gallo:
• 1 head coriander
• 1 big white onion
• 1 small chili (de-seeded)
• A couple of handfuls of cherry tomatoes
• Juice of two limes
Chop it all fine + toss together. Then add
• 2 corn on the cob
• A drizzle of oil, smoked paprika + salt
Airfryer, 30 mins till blistered + sweet.

Boxty Batter:
• 500g potatoes, peeled + finely grated
• 1 tsp salt
• ½ tsp sugar
• 1 tbsp plain flour
• 120g buttermilk

Pop the grated potato into a sieve, squeeze out the water, throw out the liquid but keep a bit of that starch and add it back in. Mix everything together till smooth and spreadable.

Sizzle it up

Plate up as seen on TV.
