It started with a last-minute request from Paula West of Lerners LLP and a vision for a celebration that needed to come together quickly.

The London Club team embraced the challenge and focused on the details that would make the experience memorable, from the throwback theme and colourful décor to a cocktail selected for the occasion. What could have been limited by time became a celebration brought to life through creativity, care, and a team committed to making it happen.

Chef Kyle brought the Mediterranean to The London Club with dishes like fresh octopus carpaccio, savoury lamb presse, and a delicious baklava to finish. Each course revealed something new, and left guests questioning "what's next?"

Enjoy a bottle of Villa Santi Prosecco accompanied by salt and malt vinegar potato chips, lumpfish caviar with sour cream and chives, mussels escabeche, and hot-smoked salmon rillette with capers and everything bagel seasoning.

Available Tuesday through Friday from 4 PM to 9 PM and Saturday from 5 PM to 9 PM, until September 5.

Sometimes the best dishes come from pushing a single ingredient in different directions.

For this feature, cauliflower takes centre stage alongside crisp-skinned seared salmon. The plate starts with a rich cauliflower ragù with smoky bacon and caramelized pearl onions, paired with butter-basted cauliflower steak and bright pickled florets for balance and texture. Finished with parsley oil, every element works together beautifully.

The dish is also highly adaptable and can be prepared gluten-free, dairy-free, onion-free, and garlic-free upon request.
