Welcome to Wh**ky Abbey 2026 - Derwent Distillery

After working with some of the biggest names in the Tasmanian wh**ky industry, Emma and Robbie Gilligan endeavoured to explore their own distilling style, selecting a notably tall copper pot still with an extended lyne arm, all designed to create a clean and light spirit.

Located just outside of Hobart, the distillery rests on the banks of the Derwent River, enjoying the oceanic climate, cool winters, and mild summers the picturesque location has to offer.

Nikka - Deconstructing a Masterpiece
Joining us from Japan, Emiko Kaji takes you inside Nikka From The Barrel, tasting its components and following the blend through the stages of marriage.

Hellyers Road - The Sherry Connection
Join Head Distiller Fiona Coutts and Spanish W**e Scholar Beth Bicknell to taste four Tasmanian single malts alongside the four sherries behind their casks.

Overeem - Casks Unleashed
Explore unusual cask finishes with Richard Mathews, including Leatherwood Honey, Maple Syrup, Stout and Cold Smoked, with unreleased whiskies to try.

Plus, Blending with the Best is selling fast! Create your own Australian wh**ky blend, with your recipe made into a personalised 200ml bottle after the festival.

Five producers. Five festival whiskies. Five cheese pairings.

One of Wh**ky Abbey’s most popular masterclasses returns: Australian Wh**ky & Cheese.

Taste five whiskies bottled especially for the festival, with each producer sharing the story behind their distillery, cask and release. Every dram will be paired with a carefully selected cheese from Victoria’s Long Paddock Cheese.

Hosted by Jonathan from Casa de Vinos and Gaetan from Long Paddock, it’s a chance to taste these special releases with the people who made them.

The line-up is under wraps for now, but expect five very different expressions of Australian wh**ky - and plenty to talk about around the table.

Masterclass Highlight:

Wh**ky Mew – Wh**ky, Manga & Japanese Pop Culture with Hideo Yamaoka

Chichibu, 23-year-old Speyside and 37-year-old Glenrothes headline a tasting where wh**ky meets manga, anime and Japanese cinema.

Hosted by Japanese wh**ky expert Hideo Yamaoka himself, this masterclass brings together five Wh**ky Mew releases, with Hideo sharing the stories behind the whiskies and the artwork on each label.

We’re excited to welcome Callington Mill Distillery back to Wh**ky Abbey as they join us for 2026 Destinations!

An integral part of their community in Oatlands, Tasmania, Callington Mill distillery have taken great care to restore and preserve the historic buildings on their site, including the majestic mill.

They have also used the latest available technology in their distillery, resulting in a range of outstanding modern single malts that are turning heads and winning awards around the world!

Who can forget their exceptional madeira cask that was bottled especially for Wh**ky Abbey a couple of years ago! This year, they’re sure to bring some incredible bottles for you to try - so go see Josh and the team at the Callington stand for a taste of one of Tasmania’s best.

Five Australian wh**ky producers. Your own blend. A bottle to call your own.
Step into the blender’s seat at Wh**ky Abbey with whiskies from Backwoods, Heartwood, Bellarine, Furneaux and Starward.

Guided by at least two of these producers in each session, you’ll taste all five components, experiment with different ratios and create your own Australian blended wh**ky.

After the festival, your recipe will become your own personalised 200ml bottle. Something to share and say, “I blended that.”

Sessions available on Saturday 14 and Sunday 15 November.

Welcome back to Wh**ky Abbey 2026, Kanosuke Distillery!

From their home on the coast of Kagoshima, Kanosuke have been making some of the most exciting wh**ky coming out of Japan. They’ve released an incredible run of new whiskies over the past six months, and they’ll be bringing them all to Abbey for you to try.

They’ll also be hosting a special festival masterclass celebrating their 10-year journey – a chance to explore how Kanosuke’s wh**ky has evolved and hear what’s coming next.

We’re looking forward to having the team back with us this November.
