Not going to use Monk Fruit sweetener in my ice-cream again it freezes to hard after being in the freezer I will have to let it sit for awhile before I can scoop some out. I have been trying to come up with different alternatives than using sugar, making healthier alternatives keeping the carbs and sugar content down. The rice malt syrup is low GI and 99% fructose free but still need to use in moderation as it’s still a form of sugar even though it’s made from Brown Rice it did however make a lovely ice-cream. I thought by using the Monk Fruit sweetener which has 0 sugars and carbs it would be a great alternative but it freezes so hard. Picture looks grey but it’s not just bad lighting.

All done I had a taste test and it’s very nice you wouldn’t know it didn’t have sugar in it.
