Traditionally Lemon Myrtle has been used for
coughs, colds, stomach upsets and in some cases applied topically for skin problems. The leaves of the Lemon Myrtle tree would be soaked in water and then put over a fire, the vapour from the leaves would then be inhaled.

Today it’s very popular as a food flavouring, an essential oil for the cosmetic industry and an insect repellent.

I love to rip the leaves up and put them in a teapot with boiling water and drink to soothe a sore throat.

The native Rosella bush (Hibiscus sabdariffa) produces red edible calyxes that are high in vitamin C. They have a pleasant tart-sweet flavour that goes well in salads, jellies, red sauces, jams, cordials, syrups, fruit teas and wine. They are often found in shops, preserved whole in syrup or liquid, as a decorative and flavouring additive for cocktails, white wine or champagne. The seeds may be roasted and ground into flour. Chicken and leek pie- the kids collected three leeks from the community garden today for one of their favourite pies.

How to make: SautΓ© leeks in butter, add salt and pepper (if you have celery you can also sautΓ© them with the leeks) Put to the side. Cook chicken then add cooked leeks back in wok. Add cream and bring to boil. Add flour to thicken and more salt and pepper (we use mountain peppers). Lay out 3 sheets of puff pastry in baking dish. Pour in the chicken/ leek mixture. Roll over sides to cover the top. Brush with milk or eggs and cook for 30-40mins.

It makes a mouth watering pie that will have your kids going back for seconds πŸ˜‹
