Our new camera and microphone equipment has arrived and we are super excited to shoot our first catch and cook segment, straight off the back deck of our family fishing trawler.

The saltwater country is what our family knows best and you will get to see my cousin Gerald and I working the sea, searching for the best catch and then bringing it straight to the plate. The freshest seafood you will ever see prepared and cooked on camera!

Exciting news! Quandamooka man and First Nations Chef, Kieron Anderson will be collaborating with world-renowned Chef, David Pugh, to produce an exciting menu for QTIC's Year of Indigenous Tourism Celebratory Dinner, following DestinationIQ 😗👌

With his classical training, Kieron infuses fine dining with ancient flavours. Linking the delicate flavours of his cuisine to First Nations cooking methods, Kieron provides diners with a fascinating insight into the flavour profiles of one of the world's oldest-surviving cultures.

I believe this dish was the highlight for our Palette X The Quandamooka Chef collaborative dinner .

With a picturesque view, looking over the Gold Coast and a dining space which was used for the first time on the top level of this magical gallery.

Locally sourced squid, poached and then finished in a moreish emulsion which was just stunning and so delicate, letting the products speak for themselves.
