Here’s the ultimate Thai peanut sauce in plain, everyday language:
What You Need:
½ cup creamy peanut butter
2 tablespoons red curry paste (or any chili garlic paste you like)
2 tablespoons soy sauce
1 tablespoon rice vinegar
2 tablespoons chili-garlic sauce
1 tablespoon sesame oil
1 tablespoon honey
1 teaspoon lime juice
1 teaspoon garlic powder (or 1 fresh clove, minced)
1 teaspoon ginger powder (or a little fresh grated ginger)
2 tablespoons water (add more if it’s too thick)
2 tablespoons crushed peanuts
What You Do:
Mix everything together in a bowl.
If it’s too thick, add a little more water until it’s smooth and pourable.
Taste it and adjust — more honey if you want it sweeter, more lime if you want it brighter, more chili if you want heat.
That’s it.
Great on chicken, shrimp, noodles, rice bowls, veggies, or even as a dipping sauce.
