The vessel you bake your bread in makes a difference. Both dough are same weigh and shaped in identical banneton. To save on electricity I put them in different Dutch oven to bake at the same time. The red Dutch oven is smaller, thus the bread came out rounder while the grey Dutch oven bread looks longer (thus slightly larger). Still beautiful breads. Tried new recipe this time with a different flour. Can’t say I like them. Still prefer bread flour.

Caramelized onion sourdough.

It looks like a plain sourdough but when I was baking it, unknowingly my stomach rumbled.

I’m not much of an onion girl but it is not too heavy for me. Fragrant with caramelized onions but not overwhelming.

My hubby on the other hand loveS onions. He will ask for both caramelized *and* raw onions every time he has a burger from in-n-out. He paired it with some rotisserie chicken and salads, and he’s happy. Yay for me cos I don’t need to cook dinner tonight! 😉

It takes me 3 days to make a sourdough bread.
Day 1: grow my levain. Takes 24 hrs to build a healthy strong levain.
Day 2: make the breads - takes up to 8~12 hours. Today it took 10 hours. Sunset looks pretty on my babies. After this is cold re**rd in the fridge for 12~24 hours.
Day 3: Bake day! The day when my whole house is enveloped in natural perfume.
Sourdough is a process. It can’t be hurried. It’s made of natural wild yeast, dependent on the ambient temperature to flourish fast, or slowly.

And I am in no hurry to rush the process.
