Smoked Steak Queso Dip
Ingredients:
For the Steak:
2–3 filet mignon steaks
Olive oil or beef tallow
Steak seasoning (garlic powder, paprika, salt, pepper)
For the Queso Dip:
16 oz white American cheese, cubed
10 oz Swiss cheese, cubed
10 oz Monterey Jack cheese, cubed
8 oz cream cheese
2 tbsp Dijon mustard
1½ cups whole milk
For Caramelized Onions:
2 tbsp butter or beef tallow
2 white onions, thinly sliced
Salt and pepper, to taste
Optional Cheese Crust:
3 tbsp grated Parmesan
1 tbsp panko breadcrumbs
1 tbsp melted butter
Toppings & Dippers:
Chopped chives or parsley
Toasted baguette slices or tortilla chips
Directions:
Caramelize the Onions:
In a skillet over medium heat, melt butter or tallow. Add onions, season with salt and pepper, and cook for 45–60 minutes until golden and soft. Set aside.
Smoke the Queso:
In a grill-safe skillet or foil pan, combine all cheeses, Dijon mustard, and 1 cup of milk.
Smoke at 250°F for about 45 minutes, stirring occasionally. Add remaining milk gradually to adjust consistency. Smoke 20 more minutes.
Grill the Steak:
Rub steaks with oil and seasoning. Grill over high heat until desired doneness (about 5–7 minutes per side for medium-rare).
Rest for 5–10 minutes, then cube into bite-sized pieces.
Optional Cheese Crust:
Mix Parmesan, panko, and butter. Sprinkle over queso and broil or grill until golden.
Assemble the Dip:
Top queso with grilled steak cubes and caramelized onions. Garnish with herbs.
Serve:
Serve hot with toasted bread or chips and enjoy the ultimate smoky, cheesy dip!
