Creamy Chicken Spinach Tortellini

Ingredients:
2 cups cheese tortellini (fresh or frozen)
1 tablespoon olive oil
1 pound chicken breast, cubed
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon Italian seasoning
3 cloves garlic, minced
1 cup heavy cream
½ cup chicken broth
½ cup grated Parmesan cheese
1 cup fresh spinach, chopped
¼ teaspoon red pepper flakes (optional)

Directions:
① Cook the tortellini according to package instructions. Drain and set aside.

② In a large skillet, heat olive oil over medium heat. Add the cubed chicken, season with salt, pepper, and Italian seasoning, and cook until golden and fully cooked (about 5-6 minutes). Remove from the skillet and set aside.

③ In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream and chicken broth, stirring to combine.

④ Add the Parmesan cheese and stir until the sauce thickens slightly. If using, sprinkle in red pepper flakes for a bit of heat.

⑤ Toss in the spinach and let it wilt for about a minute, then return the cooked chicken and tortellini to the skillet. Stir until everything is well coated in the creamy sauce.

⑥ Simmer for another 2-3 minutes, then remove from heat. Serve warm with extra Parmesan on top!

2-3 drops green food coloring

Directions:
1. Pour the non-alcoholic beer into a clear glass to see the color transformation.

Easy Cashew Chicken

Ingredients:
For the Chicken:
1 ½ lbs boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons cornstarch
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons vegetable oil
1 cup roasted cashews
1 red bell pepper, diced
1 cup broccoli florets
2 green onions, sliced (for garnish)
1 teaspoon sesame seeds (optional)

For the Sauce:
¼ cup soy sauce
2 tablespoons hoisin sauce
1 tablespoon honey
1 teaspoon rice vinegar
2 cloves garlic, minced
1 teaspoon grated ginger
1 teaspoon sesame oil
1 teaspoon cornstarch mixed with 2 tablespoons water (slurry)

Directions:
1. Toss chicken pieces with cornstarch, salt, and pepper until evenly coated.

2. Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add chicken and cook for 5-7 minutes, until golden and cooked through. Remove from pan.

3. Add the remaining oil, then stir-fry bell pepper and broccoli for 3-4 minutes until slightly tender.

4. In a bowl, whisk together all sauce ingredients, then pour into the pan. Simmer for 1-2 minutes until slightly thickened.

5. Return the chicken to the pan, add cashews, and toss everything together until coated in sauce.

4 cups chicken broth
2 cups cooked shredded chicken
1 1/2 cups uncooked egg noodles
1 cup heavy cream (or half-and-half)
1/2 cup shredded cheddar cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon black pepper
1/4 teaspoon salt
1/2 teaspoon paprika
1/2 cup cooked crumbled bacon
1/2 cup cream cheese, softened
1/4 cup chopped green onions (for garnish)

Directions:
1. In a large pot, melt butter over medium heat. Add diced onion and cook for 3-4 minutes until softened.

2. Stir in garlic and cook for 30 seconds until fragrant.

3. Pour in chicken broth and bring to a simmer. Add shredded chicken and uncooked egg noodles. Cook for 8-10 minutes until noodles are tender.

Frozen Blueberry Margarita

Ingredients:
1 1/2 cups frozen blueberries
1/4 cup orange liqueur (Triple Sec or Cointreau)
1/4 cup fresh lime juice
2 tablespoons simple syrup or honey (adjust to taste)
1 cup ice cubes
Lime wedge & coarse salt (for ri***ng the glass)
Fresh blueberries & lime slices (for garnish)

Directions:
1. Run a lime wedge around the rim of each glass, then dip in coarse salt.

2. In a blender, combine frozen blueberries, tequila, orange liqueur, lime juice, simple syrup, and ice. Blend until smooth.

2–3 filet mignon steaks
Olive oil or beef tallow
Steak seasoning (garlic powder, paprika, salt, pepper)

For the Queso Dip:
16 oz white American cheese, cubed
10 oz Swiss cheese, cubed
10 oz Monterey Jack cheese, cubed
8 oz cream cheese
2 tbsp Dijon mustard
1½ cups whole milk
For Caramelized Onions:
2 tbsp butter or beef tallow
2 white onions, thinly sliced
Salt and pepper, to taste

Optional Cheese Crust:
3 tbsp grated Parmesan
1 tbsp panko breadcrumbs
1 tbsp melted butter
Toppings & Dippers:
Chopped chives or parsley
Toasted baguette slices or tortilla chips

Directions:
Caramelize the Onions:
In a skillet over medium heat, melt butter or tallow. Add onions, season with salt and pepper, and cook for 45–60 minutes until golden and soft. Set aside.
Smoke the Queso:
In a grill-safe skillet or foil pan, combine all cheeses, Dijon mustard, and 1 cup of milk.
Smoke at 250°F for about 45 minutes, stirring occasionally. Add remaining milk gradually to adjust consistency. Smoke 20 more minutes.

Grill the Steak:
Rub steaks with oil and seasoning. Grill over high heat until desired doneness (about 5–7 minutes per side for medium-rare).
Rest for 5–10 minutes, then cube into bite-sized pieces.

Mini Pancakes

Ingredients:
1 cup all-purpose flour (sifted)
2 tablespoons granulated sugar
2½ teaspoons baking powder
¼ teaspoon salt
1 cup whole milk (room temperature)
1 extra-large egg (room temperature)
2 tablespoons salted butter (melted and cooled)
1 teaspoon pure vanilla extract

Directions:
Mix the Dry Ingredients:
In a bowl, whisk together flour, sugar, baking powder, and salt until combined.

Combine the Wet Ingredients:
In another bowl, whisk milk, egg, melted butter, and vanilla until smooth.

Make the Batter:
Pour the wet mixture into the dry ingredients. Stir just until combined; a few lumps are fine. Avoid overmixing!

Cook the Pancakes:
Heat a non-stick skillet over medium heat and lightly grease it.
Drop the batter by tablespoons or use a squeeze bottle to form mini pancakes.
