It is conventionally grilled over charcoal and basted with a mixture of annatto oil, butter, and seasonings, and is traditionally served alongside steamed rice and a dipping sauce. However, my version incorporates homemade annatto chicken garlic oil as a basting agent. It’s perfectly paired with pickled papaya.
