Chicken Inasal, a celebrated Filipino dish from the Visayas region, is distinguished by its robust, citrusy, and savory flavor profile, which is attributed to a marinade consisting of calamansi, vinegar, garlic, ginger, and lemongrass, while annatto oil adds a striking orange color and rich flavor. It is conventionally grilled over charcoal and basted with a mixture of annatto oil, butter, and seasonings, and is traditionally served alongside steamed rice and a dipping sauce. However, my version incorporates homemade annatto chicken garlic oil as a basting agent. It’s perfectly paired with pickled papaya.
