Yields: 3 spring rolls

Ingredients:

For the Spring Rolls:

* 3 rice paper wrappers
* 1/4 cucumber, thinly sliced
* 3 lettuce leaves
* 1/2 avocado, thinly sliced
* 5 large shrimp, peeled and halved
* 1 carrot, shredded
* 15-20g rice vermicelli noodles

For the Peanut Sauce:

* 1 tsp crunchy unsweetened peanut butter
* 1 tsp agave nectar (or brown sugar)
* 1 tsp soy sauce
* Juice of 1/2 lime or lemon
* Pinch of chili flakes

Instructions:

1. Prepare the vegetables: thinly slice the cucumber and carrot, and halve the shrimp.
2. Cook the rice vermicelli noodles according to package directions (usually by soaking in boiling water for 4 minutes), then rinse with cold water.
3. Briefly soak each rice paper wrapper in warm water for 10 seconds until softened. Place on a clean, damp kitchen towel.
4. Arrange the cucumber, lettuce, avocado, carrot, and noodles in a rectangle on the bottom half of the wrapper, leaving about 3 cm from the edge closest to you.
5. Place the shrimp on the top half of the wrapper, also leaving about 3 cm from the edge. For visual appeal, arrange the avocado slices attractively. Optional: add a few mint leaves.
6. Roll tightly, tucking in the sides to secure the filling.
7. Whisk together all the sauce ingredients until well combined.

* 1 smashed garlic clove

Instructions:
