DREAMY CLOUDS is a Tokubetsu Junmai Nigori with 59% milling from the Rihaku Brewery which was founded in 1882. It is made from Gohyakumangoku rice (say that three times fast!). I have enjoyed this one in many of my favorite Japanese restaurants in Chicago, NYC and San Francisco as it is bright, lean, fruity and a super easy style for sake lovers at all levels of expertise.
CRANE OF PARADISE is a Junmai with 65% milling from the Kawatsuru Brewery in the Kagawa region South of Tokyo. This one is fueled by lady boss, Miki Fujioka, and reminds me of an uber sophisticated Sauvignon Blanc – notes of grapefruit, fresh mown grass and sea salt. YUM.
ENTER.SAKE GOLD is a Junmai Daiginjo with 50% polish. This juicy delight is a little bit elegant floral and a little bit rock and roll melon and peach on the palate. A super fun one to pair with classic and modern dishes.
When it comes to enjoying your sake selections, here is how we do it in 8h:
TEMPERATURE: I love my sake at cellar temperature, 55 degrees F, but you can drink it cold, room temperature or gently warmed
GLASSWARE: I drink my sake in crystal wine glasses so that I can swirl and sip just like with fine wine made from grapes. There are so many beautiful sake glasses made from glass, ceramic and even wood boxes if you wanna sip like a real OG. Oh and the carafes!!
WHEN TO POP A BOTTLE: In my opinion, just as rice belongs at every meal, so does rice wine! There are so many sake styles that I have enjoyed a perfect sake pairing with Italian, Greek, Caribbean and every cuisine in between. Just have fun.
