At the Tipsy Possum Tiki Bar and Grill (my backyard bar) I loooove to cook good food!
Made this fried rice on the blackstone last night so I thought I’d share my secret recipie with yall.
Blackstone Hibachi Fried Rice (with Chicken)
Best batch I’ve made so far. If you’re cooking this on a Blackstone, the order matters more than anything. Here’s the quick version. I always double it. The recipe here will feed 3 hungry folks.
Prep first
- 1 lb chicken, diced small
- 3 cups cold cooked rice (day-old works best)
- 1/2 cup diced onion
- 1 bag frozen mixed veggies
- 2 eggs
- Soy sauce
- Butter
- Garlic powder
- Sesame oil
Chicken marinade (15–30 min)
- 2 tbsp soy sauce
- 1 tbsp oil
- 1 tsp garlic powder
- black pepper
Cooking order
1. Preheat griddle
Medium-high heat with a little oil.
2. Cook chicken
Spread out and let it sear before moving.
Cook about 5–6 minutes.
Finish with 1 tbsp butter + splash of soy sauce.
Move to the side.
3. Start fried rice base
Add 1 tbsp oil + 1 tbsp butter.
Cook onion and veggies for about 2 minutes.
4. Eggs
Crack 2 eggs on the griddle. Scramble and mix in.
5. Add rice
Add 3 cups cold rice. Break it up and spread it out.
Let it sit 30–60 seconds before stirring so it fries.
6. Season
2–3 tbsp soy sauce
1 tsp garlic powder
1 tsp sesame oil
I’ll usually throw in a fried rice seasoning packet too
7. Combine
Add chicken back in and mix everything.
8. Finish
Add 1 tbsp butter
Pro tips
- Cold rice makes a huge difference.
- Let the rice sit on the griddle before stirring.
- Butter at the end is the hibachi flavor.
