The process is simple. Submerge the garlic completely in raw honey, keep it covered, flip or stir the jar daily at first, and burp it as gases form. Over time, the garlic softens, the honey becomes more fluid, and the flavor deepens with age.

Whether the garlic is left whole, lightly crushed, poked, or chopped, the fermentation still works. Raw honey pulls moisture either way. Breaking the garlic may speed things up slightly, but it does not change the end result. Time does the real work.

Within the first few days to a week, you may see bubbles form as natural yeasts become active and gases build. This is a normal sign that fermentation has started.

During the first 2 to 4 weeks, keep the jar at room temperature so fermentation can properly establish. Flip or stir it daily at first and burp the jar regularly to release pressure. As fermentation continues, the honey will thin, the garlic will soften, and the sharp bite of raw garlic will mellow into something sweet, savory, and aromatic.

Once bubbling slows and the garlic is fully submerged in the thinned honey, the jar can be safely moved to the refrigerator or stored in a cool, dark place to slow fermentation and maintain quality for long term storage.
