From flour, water, salt & time.

Beautiful crust, deep caramelization, natural blistering, and that unmistakable sourdough character.

No shortcuts. Just fermentation, patience, and proper baking.

Another batch of naturally leavened sourdough, straight from the oven.

What do you look for in a sourdough crumb shot? 🍞

A beautiful crust is only part of the story. The real quality of a sourdough shows once you cut it open.

Look for open and irregular alveoli, a clean non-gummy crumb, proper fermentation, a blistered crust, and an elastic, tender texture.

So when comparing sourdough breads, don’t judge by the crust alone. A crumb shot gives you a much better look at the bread’s internal structure and texture.

And if a sourdough consistently shows a dense, gummy, poorly fermented crumb with little elasticity, that’s a sign to look deeper into the bread-making process not just the appearance.

Good sourdough isn’t just about looking rustic. It’s about what happens inside.

“Don’t start a business for the money. Start because you want to learn, grow, and see what you can build.”

May hiring problems. May staff issues.
May marketing na hindi gumagana.
May mga desisyon akong akala ko tama pero mali pala. 😂

And yes, I learned a lot of those lessons the expensive way.

Doon ko na-realize:

Huwag mong habulin ang pera. Habulin mong gumaling.

Kasi kapag natuto kang magpatakbo ng business, umintindi ng tao, makinig sa customers, mag-control ng costs, at gumawa ng tunay na value

the money becomes the result, not the reason.

Hindi lahat ng negosyo nagsisimula sa:

“Magkano kaya kikitain ko?”

Minsan nagsisimula lang sa:

“Kaya ko kaya ‘to?”

Then you try.
You fail.
You learn.
You adjust.
You try again.

Mahal ang tuition sa business.

Pero kung willing kang matuto, every mistake becomes a experience.

Chef Miko Side Note:
Kung may isang bagay akong natutunan sa Bistro Lokal, ito yun:

Build the skills. Build the value. The money will follow.

A Professional Kitchen Standard

No matter how busy the operation gets or how many orders we have, there are times when we need to pause baking and production to prioritize cleanliness and sanitation.

For me, cleanliness is non-negotiable.

High volume is never an excuse for a dirty, disorganized, or unsafe kitchen. A clean and well-maintained workspace is essential to food safety, product quality, efficiency, and professionalism.

Orders may be demanding, but our standards must remain consistent.

Cleanliness. Discipline. Standards.
