Vanilla, a flavour we often take for granted, carries a remarkable history. Cultivated by Indigenous peoples in present-day Mexico for centuries, it was transformed into a global crop in 1841 through the hand-pollination technique developed by Edmond Albius, a 12-year-old enslaved boy on Rรฉunion Island in the Indian Ocean.
