La Cocina

La Cocina La Cocina is an artistic and research space initiated by Lore Gablier and Alejandro Ramírez.

La Cocina was initiated in 2016 with the ambition to prompt a space for aesthetic and discursive experiments with a critical taste. Focusing on the kitchen as a space in which major ideological, economic, and social transformations take place, we presented a first season of events in 2016-2017 in the artist-run space Goleb in Amsterdam. In Autumn 2018, we launched an online publishing platform and

a new research theme, “A Matter of (In)digestions”: a call to pay attention to what we tend to take for granted, that is, what we consume, unfolding some of the socio-political, historical and cultural intersections that consumption implies.

For the April-May issue of Metropolis M managing editor Laura van den Bergh invited artists and collectives working with and across food in The Netherlands to contribute with a recipe. The conversations and cooking instructions were collected in the form of a cookbook that gives an insight into the interest and concerns that drive their practices. La Cocina contributed with a lentil-based cocktail. Thanks to Laura van den Bergh for the invitation. We hope you enjoy the cocktail: a bittersweet drink to spice up the conversation while talking about nitrogen, legumes, agricultural policies, biodiversity, pollution & degrowth.

Cocktail: The Night Before N

At least 24 hours before
Infuse dark Rhum with Pu-erh tea.

To make the cocktail

Step 1: Prepare the lentil-coco paste

Ingredients:
1/3 cup cooked Uril Dal
1/3 cup coconut milk
1 table spoon fresh grated ginger
4 grounded cardamon cloves
1/2 tea spoon cinnamon
1 table spoon brown sugar or agave syrup

Method:
Mix all ingredients using a blender.

Step 2: In a shaker add:

- 60 ml Rhum
- 20 ml dry Vermouth
- 1 egg
- 30 ml of the lentil-coco paste
- 3 drops Cocktail Punk bitter (or a bitter of your choice)
- A pinch of vanilla powder

Combine all ingredients and dry shake. Add ice and vigorously shake some more.
Strain into a coupe glass and garnish with freshly grated cinnamon.

Looking forward to welcoming you at 18h00 at Framer Framed for a conversation with artists Thalia Hoffman and Shailoh Philipps, Rick Dolphijn (associate professor at Media and Culture Studies), and environmentalist and farmer Eduard Hernández Nualart. Our guests will touch upon subjects such as force-feeding, food security, care and the somatic experience of eating.

The discussion follows a performance by Thalia Hoffman for a limited number of participants (FULLY BOOKED). During the discussion, “leftovers” of the food consumed during the performance will be shared.

Framer Framed and La Cocina invite you to a public discussion on FOOD. Our guests will touch upon subjects such as force-feeding, food security, care and the somatic experience of eating. The discussion will take place on Friday 18 March at 18:00 and be led by Thalia Hoffman, Rick Dolphijn, Eduard Hernández Nualart and Shailoh Phillips. Prior to the discussion, there will be a performance by Thalia Hoffman in collaboration with Shailoh Phillips for a limited number of participants. During the discussion, “leftovers” of the food consumed during the performance will be shared.

For the festival “A Matter of (In)digestions”, artist Ivan Cheng developed a new piece initially intended as a live performance , and which was turned into a film.

The piece is entitled “Virginities”, and we are glad to present it today. It is also the last contribution to the festival and thus marks the end of our program.

Biased with criticality to a notional ‘first time’, “Virginities” was written as a filmed performance situation by Ivan Cheng. Interested in the act of renegotiating value in subcultural space, the work is structured as a voiceover, two monologues, and a dialogue; blurring the body’s status as linked to fixed subjectivity, and invoking the parallels of possession in relationships and real estate. Virginities was written to be filmed in continuous takes before a live audience at OCCII, one of the few remaining venues for underground music in Amsterdam. The audience was absent, but this video registration remains largely faithful to the intended structure.

Today La Cocina presents: "Hey Honey"

Hey Honey is an essay by Klasien van de Zandschulp that invites us to slip into the space of the kitchen, and listen to the voices gossiping behind our backs, in a language beyond human grasp.

Taking kitchenware as a point of departure and combining fictional dialogues, historical references and critical thoughts, Klasien raises awareness on the way in which machinic communications have permeated our daily life. Hey Honey is a playful, yet urgent call to speculate on the often overlooked outcomes propelled by our increasingly hyperconnected world.

Join us tonight at 19.00 at Filmhuis Cavia for On Seeds and Landscapes: a screening that brings together two films by Florence Lazar (You Think That the Earth Is a Dead Thing) and Jumana Manna (Wild relatives). Both films address from different perspectives the legacy and genealogy of the colonial logic of exploitation. They question the rise of contemporary monoculture and its tensions with ancestral knowledge, local scientific practices and traditional agriculture. Remarkably, the films are also an ode to forms of resistance that are being organized around the globe.
The screening is organised as part the festival ‘A Matter of (In)digestions’.

This week, as part of the festival 'A Matter of (In)digestions, we present "A Treaty on Coffee and Sleep. Instagram 24/7": an Instagram takeover by Barcelona-based curator Alexandra Laudo ()

For seven days, every day around 7 am, she shares visual materials of her ongoing research in which she examines the way late capitalism and wireless technologies have blurred the line between productivity and leisure time. In this context, sleep ceases to be perceived as a natural and vital function and is regulated in favor of productivity and time optimization.
Laudo specifically focuses on coffee, whose consumption unravels a colonial genealogy marked by its multiple reverberations within the so-called contemporary global economy.
