We’re happy to share that our wine list received Silver at the Star Wine List of the Year Global Finals 2026.

Led by Mo, the list has never been about collecting labels. It’s about finding wines we believe in and are excited to pour, whether they come from a historic vineyard or a newer voice pushing things forward.

A big thank you to the producers, importers, guests and team who make that possible.

We’ll keep doing what we’ve always done: opening bottles we love and sharing them with anyone who pulls up a chair.

We’re looking for someone who genuinely enjoys hospitality, takes care of people and understands that the small details matter. An appreciation for food, wine and music is always welcome, and a keen interest in wine is a definite advantage.

CUE is a small team, which means everyone plays an important role. Service, preparation, learning and growing all happen together.

As part of our Europe’s 50 Best Bars programme, we’re happy to welcome Kay Suzuki for a special edition of Obsession.

Born in Japan and based in London, Kay has spent years exploring the spaces where music, culture and hospitality meet. Through his record label Time Capsule, his publishing work and his long connection to London’s listening scene, he has developed a thoughtful approach to sharing music and the stories that surround it.

As a producer and DJ, his work has been supported by influential figures such as David Mancuso, Gilles Peterson, Theo Parrish and DJ Harvey, helping establish him as a respected voice within the global underground music community.

Throughout this week, we’ll be exploring Japanese culture, craftsmanship and seasonality, not only through food and drinks, but through music and the act of listening itself.

For this session, Kay will guide us through a selection rooted in his connection to Japanese music and sound culture.

No phones. No talking. Just listening.

A big thank you to the team from Casa Fofō for making the trip to Amsterdam and spending the evening with us.

Good people, good energy and a menu that brought together two kitchens with a shared appreciation for seasonality, craftsmanship and cooking from instinct.

Collaborations have always been an important part of CUE. They give us a chance to learn, exchange ideas and spend time with people whose work we admire.

This one may be over, but there’s plenty more to come.

Another highlight from our programme during

On Monday the 29th of June we are going to take you to the next level. A collaboration between two magicians sharing the same Japanese principle: shun ~ eating and living in harmony with the
seasons.

Roku, the Official Gin Partner of 50 Best Bars, embodies the Japanese practice of shun, where seasonality is honored by savoring ingredients at their peak.

Inspired by Roku, our own Michelin-starred chef George Kataras has created a menu where seasonality and craft come together.

He is teaming up with Keith Motsi, head bartender of VIRTÙ in Tokyo – No. 45 in the 2025 edition of The World’s 50 Best Bars. VIRTÙ cocktail philosophy bridges France and Japan, creating a dialogue between old-world refinement and Eastern precision.

Together with our partner Roku, CUE is presenting you our 4 day program during Europe’s which is held in the beautiful city of Amsterdam. The full programme is now live in our Instagram highlights.

We start on June 28th with Obsession, CUE’s silent listening session inspired by the Japanese kissa bars. A chance to slow down and listen properly.

The mornings are dedicated to tea sessions with meditation, followed by Masterclasses and conversations with the team from Waltz Bar London. If you’d like to join, send an RSVP to [email protected].

As the days move on, the bar takes on a different rhythm. Friends from Europe and Tokyo step behind the counter, cocktails are poured and records keep spinning.

Space is limited for the guest shifts. Tickets are available through the links in bio and include a welcome cocktail on arrival.

Good things take time.

Bread starts with flour, water, salt and a natural culture, but no two days are ever the same. Temperature, humidity and fermentation constantly change, so daily adjustments are part of the process and crucial.

That’s the beauty of working with natural yeasts. The bread is alive, and attention to detail matters.

Craft isn’t something reserved for special occasions. It’s the small things, done properly everyday that we strive for.

This year, Amsterdam becomes the stage for Europe’s

At CUE, things will slowly shift towards Japan for four days. An immersive journey moving from Tokyo to Amsterdam, taking over every floor of the building along the way.

Together with Roku, the Official Gin Partner of , we will build an experience around the values that naturally connect us. Craftsmanship, seasonality, attention to detail and the quieter side of hospitality.

Expect early mornings flowing into late nights. Cocktails, food, music, Japanese traditions and good people moving through the space together.

Seasonality doesn’t stop upstairs.

The cocktails downstairs follow the same rhythm. Throughout the year, fruits, flowers and vegetables are preserved at their peak. Fermented, pickled, steeped in syrup or vinegar.

The ingredients you see here are part of that process. A way of capturing a season and bringing those flavours back when the time feels right.

Just like the kitchen, the menu downstairs is always changing. Guided by the seasons and shaped by what’s worth keeping.
