STEP BY STEP HOW TO PREPARE Nigerian DELICIOUS STEW
Step Action The "Secret"
1. The Prep: Blend the peppers, tomatoes, and onions. Boil the mixture in a pot until the water completely evaporates, leaving a thick paste. This prevents the stew from "splashing" and cuts frying time in half.
2. The Oil: Heat vegetable oil (or palm oil for a designer stew vibe) in a deep pot. Fry sliced onions until translucent. Adding a bit of ginger/garlic paste here elevates the aroma.
3. The Fry :Add the boiled pepper paste to the hot oil. Do not cover the pot completely. Letting steam escape helps it fry rather than steam.
4. The Seasoning :Add bouillon cubes, curry powder, thyme, and salt. Add your meat stock (broth) slowly. Too much stock will turn it back into a soup.
5. The Finish :Fry on medium-low heat until the oil rises to the top and the pepper looks grainy and dark red. If the oil isn't floating, it's not fried enough!
