In a world of ribeyes and striploins, I like being led in an exploration of lesser-loved secondary cuts, and yesterday at Meat Feds - Specialty Cut Steaks, it was all rump, flank, and picanha.

The Wagyu Flank Sinatra went down without a hitch, and I’d say that the Japanese Hida beef will find fans who prefer a clean, meaty flavour.

The Hamsap Siew Yuk is a winner all around. And so are the nine homemade salts.

Yenni Law and Shelly Saw really care about their food, and their guests’ experience, so when we gave honest feedback about the dessert they absolutely took it in stride and wanted every detail because in their words “一定要过自己那关”

And I will always resonate with folks to do things with the heart.

I don’t know why I felt like a throwback of this song “Unfettered” that I wrote (and filmed) at Bon Ton Locale’s artist residency last year.

I remember the thing playing in my head of over and over those two months was this phrase “apathy is the poison of the soul”, and a large part of it had to do with AI.

Maybe this is my little act of resistance, in a world full of manufactured words, and “art” (I wanna puke) trying to masquerade as a replacement for the messy, insane, weird and wonderful thing that is our human existence.

I need to keep my heart open, and my soul conscious, and if you’re out there, resonating with any bit of this, then my job is done.

Just saying to logee “If I didn’t have diabetes, I wouldn’t be doing this”

But I often say, that diagnosis I got in 2019 a week before my birthday, has been the biggest blessing in disguise.

Do I enjoy exercise and sweating?
Imma be honest, it’s still a hell no.

But I’ve always been the kind of person who’ll take them lemons that we never asked for , squeeze the hell out of them for a lemonade, a gremolata, make a lemon posset and candied peels then throw a dinner party.

This health thing feels like the universe telling me I need to be alive a lot longer cuz I got s**t to do.
So here I am, doing the s**t.
And I’m lucky I’ve got folks willing to push me to do more while I stare daggers at them. (Ahem, Philip Lee)
