My mother used to make the most incredible Bahthieh back home in Gaza. I made a batch here in our UK home, hoping for a taste of memory, but nothing ever compares to a mother’s touch! I tried offering some to Lena, and as you can see, she wasn’t having it at all 😂 Even if my version isn’t quite up to mom’s standard, cooking these traditional dishes keeps us connected to our roots and memories. Nothing beats the comfort of homemade Bahthieh (بحثية)! Just simple, wholesome ingredients. milk, rice, sugar, and topped with crushed nuts and cinnamon but to me, it’s better than any gourmet sweet out there.
