Another one worth saving 🌶️
This Bang Bang Chicken with Red Pepper Salad from is exactly the sort of meal I love to recommend.
Plenty of protein, a good serving of carbs to support training, some colour and variety from the salad, and equally importantly, it’s something you’d actually want to eat again.
Nutrition doesn’t need to mean creating a completely different meal every night.
Find five or six good ones that fit your goals, that you enjoy making, and that you’re happy to keep coming back to.
Bang Bang Chicken with Red Pepper Salad (3 servings)
For the chicken
800g chicken thighs
3 tbsp cornflour
2 tbsp Greek yoghurt
1 tbsp brown sugar
2cm piece ginger, cubed/minced
3 spring onions
1 tbsp dark soy sauce
Bang Bang sauce
5 tbsp Greek yoghurt
3 tbsp sweet chilli sauce
1 tsp Sriracha
Juice of ½ lime
Rice
200g uncooked rice
Red pepper salad
1 red pepper
1 cucumber
½ red onion
Small handful coriander
1 tsp chilli flakes
1 tbsp olive oil
Pinch of salt
Juice of ½ lime
To make it
Mix the chicken with the cornflour, yoghurt, brown sugar, ginger, spring onion and soy sauce, then cook in a hot pan until golden and cooked through.
Cook the rice according to the packet instructions.
Mix the Greek yoghurt, sweet chilli sauce, Sriracha and lime together for the Bang Bang sauce.
For the salad, chop the red pepper, cucumber and red onion, then combine with the coriander, chilli flakes, olive oil, salt and lime.
Rice down first, chicken on top, plenty of Bang Bang sauce and the salad alongside.
