Garlic Butter Chicken with Creamy Parmesan Penne
Ingredients:
2 chicken breasts, boneless and skinless
8 oz penne pasta
3 tablespoons butter
4 cloves garlic, minced
1 cup heavy cream
1 teaspoon Italian seasoning
1 cup grated Parmesan cheese
1/2 teaspoon dried thyme
1/2 teaspoon garlic powder
Salt and pepper to taste
Fresh parsley, chopped for garnish (optional)
1 tablespoon olive oil
Directions:
Cook the pasta: In a large pot, bring salted water to a boil. Cook the penne pasta according to package instructions, then drain and set aside.
Cook the chicken: While the pasta cooks, heat olive oil over medium heat in a large skillet. Season the chicken breasts with salt, pepper, and garlic powder. Cook the chicken for 6-7 minutes per side, until golden brown and cooked through. Remove from the skillet and set aside.
Make the garlic butter sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes, until fragrant.
Add the cream and seasoning: Pour in the heavy cream and bring to a simmer. Stir in the Italian seasoning, dried thyme, and grated Parmesan cheese. Continue to cook for another 3-4 minutes, stirring constantly, until the sauce thickens.
Combine the pasta: Add the cooked penne pasta to the skillet with the creamy sauce. Toss to coat the pasta evenly in the sauce. Slice the cooked chicken breasts into strips and add them back into the skillet.
Serve: Garnish with fresh parsley and extra Parmesan, if desired. Serve immediately and enjoy!
